The freezer has become my backup plan for egg season. Whenever the refrigerator starts looking more like an egg cooler than a refrigerator, I spend an hour making breakfasts I can stash away for later. A batch of these egg breakfast bites doesn't take much effort, and they're the kind of thing you appreciate on mornings when there's no time to cook but you still want something homemade. These egg breakfast bites are a simple make-ahead breakfast packed with protein and flavor. They’re perfect for busy mornings because you can enjoy them fresh from the oven or keep them in the freezer for an easy grab-and-go meal.
Ingredients
1 lb. cubed ham, sausage, bacon
1 medium onion, diced small
15 large eggs
½ teaspoon seasoning salt
1 medium red bell pepper, diced small
½ cup very finely chopped broccoli
1 cup freshly grated cheddar cheese

Instructions
Prepare the oven and muffin pan. Preheat the oven to 350°F. Generously spray 18 muffin cups with nonstick cooking spray.
Cook the ham and vegetables. Add the cubed ham, diced onion, red bell pepper, and finely chopped broccoli to a skillet over medium heat. Cook until the vegetables soften and the ingredients are warmed through. Remove from the heat and set aside to cool slightly.
Prepare the egg mixture. Crack the eggs into a large bowl. Add the seasoning salt and whisk until well combined.
Combine the ingredients. Add the cheddar cheese and the ham and vegetable mixture to the eggs. Stir until everything is evenly mixed.
Fill the muffin cups. Use a measuring cup or spoon to divide the mixture evenly among the prepared muffin cups.
Bake the egg breakfast bites. Bake for 20–22 minutes, until the bites are puffed and just barely set in the center.
Cool and serve. Let the egg breakfast bites cool for a minute or two before removing them from the muffin pan. Run a knife around the edges if needed, then serve warm.
